It all started in 1984 in Hérisson, a small village in the heart of France, where Monsieur Perrier, also called Monsieur Balthazar, carries out the first distillation. David Faverot took over in 2013 by perpetuating the style and improving the recipes. Distilled in an iron still, corn, barley and rye are harvested locally and form the basis of its brew for its famous Hedgehog whiskey.
A true enthusiast, he is in perpetual quest to improve his micro-distillery and in constant search of new recipes. For the first time, he created a gin made exclusively from organic ingredients from Auvergne: Balthazar gin!
Artisanal production from plants & fruits of Auvergne picked by hand and preserved according to the principles of herbalist:
Juniper (Haute-Loire), Lemon balm, Chamomile, Aronie, Angelica, Achillea, Sage, Elderberry, Nettle, Physalies, Toasted walnuts, Medlars
Nose: fresh, vegetal, which evolves into notes of white-fleshed fruits, then chlorophyllian reflections
Palate: melted and silky, confirms the aromas of the nose
Overall: finesse and freshness with a nice length
